Grilled Veggie Sandwich with Goat Cheese

I haven't posted in a while and I've had so many people ask me for this recipe I decided to share it!

Veggies
2 medium Zucchini
2 medium squash
1 large red onion
2 large portabella mushrooms
1/4 cup good quality balsamic vinegar
1/4 cup olive oil
2 shallots
1 garlic clove
salt & pepper to taste.
Sandwich
Sourdough Bread
Goat Cheese
Preparation
You slice the veggies into thick slices, I do it on a bias so they are longer and more oval in shape. Chop up the shallots and garlic and put everything in a dish to marinade in the balsamic and olive oil. I usually marinate it an hour or so. 

To Cook
Depending on the weather, my mood, and how much time I have I cook the veggies several ways. I love to cook them on the grill, gives the best flavor in my opinion, takes the least amount of time, the only thing about this is I will take the marinade and reduce it on the stove because the grill doesn't hold that awesome balsamic flavor nearly as well as broiling or especially the stove top method. If grilling isn't an option you can broil it in the oven, I usually do it at 350, or cook it on the stove top, which is the juiciest and most flavorful method. I just cook it until the veggies are really tender and have absorbed a lot of the marinade.

To Eat
Toast some sourdough, you can grill it, toast it in the oven or on the toaster, I love it in the oven it gets so toasty on one side and soft on the other, brush some olive oil on it if you want, crumble some goat cheese and top GENEROUSLY with the veggies, and enjoy! It's so yummy!
